Why it's worth it

Caroline Chambers wrote this for tired people with half-empty fridges and a thirty-minute window, and it shows in every recipe. Ingredient lists are short, prep is minimal, and each dish comes with explicit swaps so a missing item never derails the whole plan.

It treats your exhaustion as the design brief, not a problem to overcome. Most weeknight cookbooks are regular cookbooks with a timer slapped on the cover. This one starts from the actual situation: it's late, you're done, and you don't want to think. The recipes are short, forgiving and built to be made while you're only half paying attention.

The ingredient swaps are the whole trick. Every recipe tells you what to use instead. Out of shallots, use onion. No cream, use whatever dairy you've got.
