Why it's worth it

An inch and a half of solid hard maple, 20 by 15 inches, with finger grips cut into both ends. It's heavy enough to stay put on its own, gentle enough that a sharp knife sinks in instead of skidding, and thick enough to sand flat again years from now.

This is the board you buy once. It's solid hard maple, built the way John Boos has built butcher blocks for well over a century. Edge grain means the long faces of the boards take your knife, which is sturdier than end grain and costs less. When the surface finally looks tired, you sand it and re-oil it, and you're back where you started. There's no mechanism here to break.

Hard maple sits in a sweet spot for hardness. The Wood Database puts it around 1,450 lbf on the Janka scale — firm enough that your knife doesn't dig trenches, soft enough that the edge isn't grinding against something unyielding. That's why it's been the default for butcher blocks for generations. You'll still see fine pale lines across the face after a few months of daily cooking. They sand out.
