Why it's worth it

A 22-quart roaster with a self-basting lid, a defrost setting and a dial that runs from 150 to 450 degrees. It holds a 20-pound bird with room to spare, thaws a turkey you forgot about, and keeps dinner warm while you finish the gravy.

The self-basting lid is the feature that actually changes your afternoon. Condensation collects on the underside of the dome and drips back over the bird, so you're not opening the lid every half hour with a bulb baster. That matters more than it sounds. Every lift dumps heat out of a small sealed box and stretches your cook time, which is exactly what you don't want when six other dishes are queued behind it.

The 150-to-450-degree range covers the whole cook, start to finish. You can run hot for the first half hour to color and set the skin, then drop to 325 for the rest without moving the bird anywhere. The low end is just as useful once dinner's plated, since it doubles as a holding temperature for a ham or a pan of dressing. Most roasters here don't go anywhere near that low.
